It was my mother-in-law’s birthday on the weekend and my sister-in-law (who is an amazing cook) made these absolutely delicious yummies. I am not such an amazing cook, but I thought I’d attempt them. Anyways, here’s the recipe for anyone who wants to attempt them with me *drool*
(All measurements are metric. Sorry to my Imperial friends)
Caramel Fingers
125g butter
3/4 cup brown sugar
1 egg
1/2 cup chopped dates
1/2 cup chopped pecans
1 cup Sultana Bran (which is a brekkie cereal of bran flakes and sultanas)
1/2 cup SR flour
1/2 cup SR wholemeal flour
Preheat over to 180 degrees cel. Melt butter and sugar over low heat, stir well, cool.
Beat egg and add to butter and sugar. Add dates, pecans, bran flakes and flour.
Spread mixture into greased 20cm square tin.
Bake in moderate over for 20 minutes. Cut into fingers when cool. Delicious with whipped cream or ice cream (or drizzle with chocolate fudge for a decadent treat)
Makes about 15-20 fingers.
